Highly perfumed liquid gold
Sharing a space with our oldest vineyard plantations are traditional olive trees of varieties native to La Rioja, over 200 years old, which marked the beginning of the oil production activity of Viña Ijalba.
2000
Until the year 2000, the olives obtained were transformed into extra virgin olive oil at an oil mill for personal consumption.
2001
From 2001, the oil produced in our olive groves began to be produced and packaged with its own brand, there being 15 hectares of olive trees cultivated to date.
VARIETIES PLANTED
Arbequina
This is a variety with a very good fat yield and very good oil quality.
Empeltre
With a constant and high production, early ripening and easy detachment. Its oil is high quality, with a high fat yield.
Redondilla
A minority variety in la Rioja, with low robustness, resistance to the cold of winter and good oil quality. It has a very good yield and known quality, and is very interesting when mixed with Arbequina.
Machona
Very rustic and distinctive. Offers high production. Its oil is organoleptically very appealing, with a high oleic acid content.

OLIVE GROVES
Viña Ijalba owns 15 hectares of olive groves located in Rioja Alta, in areas with poor but very well-drained soils.
TASTING
With a bright green colour, this is an oil with an intense fruity flavour of fresh olives and a great complexity of herbaceous and fruity aromas, with tomato plant and apple standing out.
It is full-bodied and well-structured on the palate, with great expressiveness, sweet and slightly spicy.
A well-balanced and elegant oil, both on the nose and on the palate.
SERVING SUGGESTIONS
Breakfast toast, salad dressings, fish and roasted vegetables, rice dishes and chocolate.
